Ingredients
  • K&N's Frankfurter Sausage - 2 sausages
  • Chicken broth - 1.5 liter (made with 3-4 cubes K&N's Stok, dissolved in 1.5 liter water)
  • Fresh green beans - 2 cups; sliced
  • White kidney beans - 425 grams; rinsed and drained
  • Tomatoes - 425 grams
  • Onion - 1 cup; chopped
  • Celery - 1 cup; chopped
  • Tomato paste - 170 grams
  • Spinach - 300 grams
Method

Thaw K&N's Frankfurter Sausage as per instructions on pack and set aside.

In a pot, combine the chicken broth, green beans, white kidney beans, tomatoes, onions, celery and tomato paste. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.

In a skillet, brown the Frankfurter Sausage in 2 tsp oil over medium heat. Add a small amount of hot water. Cover and cook until sausage changes colour, then drain.

Cut the sausages into ¼-inch slices and add to soup. Simmer uncovered for 15 minutes.

Add spinach and continue to simmer uncovered for 15 more minutes or until spinach is wilted.

Dish out the soup in a bowl, garnish with dried oregano, white pepper and/or parmesan cheese, as desired and served.
